We are still in our morning mode. We have done pranayama and asanas off the side of the bed now it is time for breakfast!
Following is a simple granola recipe. You can eat it as is or add yogurt, fruit juice or nut milk and enjoy. Please make and cool and put into an airtight container for future use.
Preheat your oven to 300 degrees or less depending on your oven. Line a large baking sheet with parchment paper.
Place ¼ cup peanut butter or any nut butter, ¼ cup maple syrup, 1 tsp vanilla, and ½ water in a blender and blend until smooth or just put the ingredients in the bowl and whisk until smooth and creamy.
Place the 4 cups of oats (not quick oats) in a large bowl and pour the nut butter mixture over them. Mix until the oats are well coated. Spread the mixture evenly over the parchment lined baking sheet.
Bake until the oats are dry to the touch and lightly browned, stirring occasionally, 40 to 50 minutes. Turn the oven off and the leave the granola in the oven until it has cooled completely.
Store the granola in an airtight container at room temperature for up to 10 days or just freeze and use when needed.
